There is nothing nicer on a holiday weekend than a leisurely, scrumptious home made brunch, wreathed in frying bacon aromas and that whiff of lovely sweet cooking pancakes.
Ingredients
For the pancakes:
- 1 cup Plain Flour
- ½ tsp Baking Powder
- 1 egg
- 1 cup Milk
- ½ teaspoon Vanilla essence
- 1 small Banana
- Pinch of Salt
To assemble: Thin sliced crispy bacon - as much as you want - but a 250 g pack will serve 4 portions. 1 medium banana - sliced Blue berries - a couple of handfuls - about 4 tablespoons - one for each portion ½ cup good original Maple Syrup (or as much as you feel your guests will need to drown their pancakes)
Method:
Simply whisk all the pancake ingredients together. It's that easy. Butter your fry pan or flat grill on a medium to high heat. (You can use oil, this time, butter does make the difference!) Pour the pancake batter onto the pan to make 12 cm diameter circles (or to fit your serving plates) Cook until golden on one side and bubbly on the top side. Then flip. Cook for a minute or so longer and its all ready
To assemble:
Layer pancakes and sliced bananas, top with the crispy bacon, scatter blue berries over the pile and drizzle with maple syrup. (may pay to also have a small jug on the side - they can never have enough!)
Berry Smoothie
Ingredients:
- ½ cup frozen berries
- 1 cup liquid, made up of the following according to your taste - all milk, half milk half juice, or all juice.
- 2 tablespoons yogurt.
Method:
Put all ingredients in a blender and blend till combined.
