Connie Gates' coconut loaf
Wed, 22 Aug 2012 7:00p.m.
Connie Gates is the proud grandmother of Kiwi Olympian Aaron Gates, and the Decadent Slice she'd made to give him on his return proved so popular that condensed milk was reportedly flying off the shelves all over the country.
Lachlan Forsyth went to beg for another recipe, and here it is!
Mix milk and coconut and leave to soak for one hour.
Add self-raising flour and sugar.
Mix and bake at 190 degrees for 1 hour.

I have been making this loaf for years. I called it Solo Mothers loaf. As a low income Solo Mother I found Eggs and Butter were too precious to put in baking. I would love some other recipes without eggs and butter, anyone... yes I think fan bake should be on lower temp.
