As a stunt fisherman, he pushes every limit until it breaks to bring in the big catch.
As fishing fans would know, Watson and his team have been doing his crazy stunts for six years.
So far, apart from sponsorship, he has never been paid for an episode. But now that is all going to change.
Thanks to the power of YouTube, Watson has just been discovered by America.
Watson has just returned from New York after doing an interview with David Letterman and signing global television deals.
Mr Watson's first attempt at television was a video entry for a Sports Café competition.
What has brought the US networks here is Watson's passion for fishing. He says all of his stunts are just designed to get people to understand the thrill and the need to conserve the fisheries.
"We have a conversation message," he says. "I want my kids to experience what I do - as far as normal fishing goes."
Watson says there is enough extreme fishing for everyone and he is determined not to forget his New Zealand show, despite the international spotlight.
