Recipe: Carrot cake for a Duchess

Yesterday, as part of her New Zealand visit, the Duchess of Cornwall ate some carrot cake, and afterwards the school that made it for her tweeted her a picture of it. It looked delicious, and indeed Clarence House tweeted back to say that it was. 

But while we know Camilla enjoyed the cake, what we possibly don't know is the school where she ate it not only baked the cake, it also grew the carrots in a magnificent garden on its own grounds.

It’s not some stately private school, but a decile-one state school, among the power pylons of Auckland’s East Tamaki. Something special is happening there, because people who can are choosing to make a difference.

KidsCan are in there, and so too are Garden to Table – a programme aimed at getting kids growing their own food.

Church groups and charitable foundations are also involved, all embodying the proverb "it takes a village to raise a child".

We went back there today, to see the school who made a cake for a Duchess.

EAST TAMAKI SCHOOL CARROT CAKE RECIPE

Equipment

  • grater
  • measuring spoon and cup
  • mixing bowls – 1 large, 1 medium
  • wooden spoon
  • sieve
  • 23cm diameter cake tin -greased
  • spatula

Ingredients for cake

  •  1 cup grated carrots
  • 227g can of crushed pineapple
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¾ cup sugar
  • 2 eggs
  • 5 tablespoon oil
  • ¼ cup chopped walnuts

Ingredients for cream cheese icing

  • 3 tablespoons butter
  • 3 tablespoons cream cheese
  • ½ teaspoon vanilla
  • 250g icing sugar

Method for making cake

1. Preheat the oven at 175°C.
2. Drain the juice from the can of crushed pineapple. 
3. In a large bowl sieve the plain flour, baking powder, baking soda, salt and cinnamon together. Mix in the sugar
4. Add the eggs and oil.
5. Mix very well.
6. Stir in the grated carrots, crushed pineapple and walnuts.
7. Pour the mixture into a greased cake tin.
8. Bake in a moderate oven 175°C for 35 to 40 minutes.
9. Remove the cake from the cake tin and cool on a cake rack.

Method for making cream cheese icing

1. Place all the ingredients into a medium size bowl and beat very well with a spatula.  If too thick, add a small amount of milk to give a smooth consistency.
2. Smooth a layer of topping over the cake and decorate with chopped walnuts or edible flowers.
